It may come as a surprise, but chicken wings used to be thrown out or only used as stock for soups and sauces. Less than 50 years ago, they were the least-desired part of the chicken. How chicken wings made the radical transition from unwanted to much-beloved is a bit debated, although it’s a welcome example of how restaurants are reducing food waste.

Regardless of who invented hot wings, it’s well known that the location of their origin is Buffalo, New York. Hot wings arrived in L.A. back in 1986 at the Hot Wings Cafe.
